Sometimes you need cookies...
Easy No Bake Cranberry Oatmeal Cookies (makes 6 large or 12 smaller cookies)
- 1/4 cup coconut oil
- 1/2 cups gluten free/regular oats
- 1/3 cup raw cane sugar
- 2 tbsp cashew or almond milk
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup
- Pinch of salt
- 1/2 cup dried cranberries
Melt the coconut oil in a sauce pan over low/medium heat. Mix in oats, sugar, nut milk, vanilla, maple syrup and salt until consistent. Add cranberries and turn off the stove.
Use a spoon to scoop the mixture into a muffin tin and put the muffin tin in the freezer for ~20 minutes. These cookies are best right out of the freezer.
