This Dreamy Turmeric Cashew Sauce turned out to be so delicious and so quick to prepare, I see myself using it all the time. It could be served with either a hot or cold dish (although I enjoyed it warm!) and gives a unique twist to a simple dish, like soba noodles or even as a dressing to a salad.
I love to sneak turmeric into my diet whenever I find it to benefit from its awesome anti-inflammatory properties. Did you know pairing turmeric with a bit of black pepper helps boost its bioavailability? Like up to 2000%. If you've never worked with fresh turmeric before, be warned that it stains. To avoid orange fingers, you may want to put a pair of gloves on when handling or just go with it and enjoy the new look!
10 Minute Meal
Soba Noodles with Dreamy Turmeric Cashew Sauce (serves 3-4)
- 1 package of soba noodles (look for 100% buckwheat if gluten free desired)
- 2 cups of baby spinach or any veggies you have on hand
- Optional: 1/2 cup toasted, chopped walnuts, red pepper flakes (as desired)
Dreamy Turmeric Cashew Sauce (makes ~1 cup)
- 1/2 cup olive oil
- 1/2 cup water
- 1/3 cup cashews
- 2 ~2 inch pieces of turmeric, peeled
- 1 clove garlic
- 1 tsp maple syrup
- 1/2 tsp salt
- Dash of cayenne
- Black pepper as desired
Prepare the soba noodles according to package's directions. They usually cook very quickly (~4 minutes) so make sure everything is ready for the sauce before cooking.
In a mixer, a combine all sauce ingredients (olive oil, water, cashews, turmeric, garlic, maple syrup, salt and cayenne). Blend thoroughly on high until mixture is consistent.
Once the noodles are done, drain and mix spinach in while still warm. Toss with sauce and serve with toasted walnuts, pepper flakes.
