Dragon fruit and I are still getting to know each other, but this gorgeous fruit is quickly becoming a favorite. It tastes like a mix between a pear, a honey dew melon and a kiwi.
This isn’t a very detailed recipe, just a simple breakfast bowl that I enjoyed. Next time I make it, I think I’ll add some blueberries for another pretty color and some added sweetness.
Dragon Fruit and Avocado Breakfast Bowls (makes 2)
- 1 ripe dragon fruit
- 1/2 ripe avocado
- Juice + zest of 1 lemon
- Optional: coconut flakes and chopped mint leaves
Cut the dragon fruit in half and use a melon baller to scoop out its insides into a separate bowl (save the peel as the bowl to serve in). Next, use the melon baller to scoop out the ripe avocado. Half of the dragon fruit and avocado to each reserved dragon fruit “bowl” and top with a generous amount of lemon juice and peel. Optional: add some coconut flakes and mint leaves to serve.
