Summer date night on the patio!!
Special of the evening is a #vegan variation of pasta and peas.
Quick Summertime Date Night Pasta
Prep time: ~15 minutes
1 package of orecchiette pasta
3/4 cup of vegetable broth
1 tbsp. Earth Balance
1 tbsp. olive oil
3 tbsp nutritional yeast
1 medium-sized yellow onion
2 cloves worth of chopped garlic
2 cups of baby spinach
1 1/5 cups of chopped green beans
Dash of garlic powder
Red pepper flakes (optional)
Salt and pepper to taste
Boil water and add the pasta of your choice. In the meantime, start chopping the onion, garlic and trimming the green beans. After the pasta is about halfway done, you can start with the sauce. Add the olive oil to a sauté pan and gently heat. Stir in the chopped onion and garlic. Once the onion is transparent, add the veggie broth earth balance and 2 tbsp of nutritional yeast and dash of garlic powder. Next, add the green beans and spinach on low heat being careful not to overcook. When the pasta is done, add it to a bowl and pour the veggies and sauce over it. Toss with last tbsp. of nutritional yeast. Add salt and pepper to taste and top with red pepper flakes!
